Cannabis-infused purple sweet potato pie

Pie crust ingredients
- 1 1/2 cups gluten-free flour
- 3 tablespoons (tbsp) coconut palm sugar (or the sugar substitute of your choice)
- 1/2 teaspoons (tsp) salt
- 1/2 cup ice water
- 1/4 cup cold vegan butter
- 1/4 cup cold vegetable shortening
Pie filling ingredients
- 1 pound purple sweet potatoes (roughly two medium-sized potatoes)
- 3/4 cup coconut milk or cream
- 1/2 cup date sugar or the sugar substitute of your choice
- 1/2 cup agave or the sugar substitute of your choice
- 2 tsp organic vanilla bean paste
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 4 tsp cornstarch
- 4 tsp cannabis-infused butter, melted
Instructions
- In a large mixing bowl, whisk together the gluten-free flour, coconut palm sugar, and salt until well combined. Use a fork or a pastry cutter to cut the butter and shortening into the mixture until the texture resembles sand.
- Add the ice water 2 tbsp at a time, using your hands to incorporate it into the mixture. Continue to add small amounts of ice water until the mixture forms a dough consistency.
- Dump the dough onto a lightly floured surface and shape it into a ball. With a rolling pin, roll out the dough into a circle and transfer it to a 9-inch pie dish. Form the dough inside of the dish and use a fork to crimp the edges along the rim. Place your raw pie crust in the refrigerator until you’ve made the pie filling.
- Cook your purple sweet potatoes by either steaming them in a steamer pot or baking them in a 400°F oven for 30 to 40 minutes. They should be fork-tender, and the skin should peel off easily.
- Peel the skins off your potatoes and mash them using a fork or potato masher.
- Combine the potatoes, coconut milk or cream, date sugar, agave, vanilla, cinnamon, ginger, nutmeg, salt, and cornstarch in a large mixing bowl. Mix the ingredients well with a hand mixer. Mix in the cannabis-infused butter.
- Pour the filling into the pie crust and spread it evenly with a spatula.
- Bake the pie at 350°F for 45 to 50 minutes or until the center is slightly jiggly. If the crust begins to burn, use a pie shield or cover the edges with aluminum foil for the last half of baking.
- Allow the pie to cool for about an hour before serving. Once cooled, cut the pie into eight slices and serve with vegan whipped cream, if desired.
